Paula Deen’s Strawberry Salsa

In The February issue of Cooking with Paula Deen, I was very inspired with the article Berry Beautiful. It is true that those who live in the south are the first to enjoy the delicious harvest of strawberries. I decided to make the Strawberry Salsa after being teased and tempted with many strawberry dishes.
1 pound fresh strawberries, hulled and finely chopped
¼ cup chopped green onions
¼ teaspoon kosher salt
1/8 teaspoon crushed red pepper
2 tablespoons fresh lime juice
1 tablespoon honey
In a medium bowl, gently stir together strawberries, green onion, salt, and red pepper.
Drizzle with lime juice and honey, and gently toss. Cover and let stand at room temperature for 30 minutes, or refrigerate for us to 2 hours before serving. This makes about three cups.
Overall, I thought this was a quick recipe and it tasted good with corn chips. I think it would also taste great over grilled shrimp or chicken. Next time you are in the store, look for those “Red Ripe Beauties” as Paula calls them. Create something Berry good.
